It had become the makings of an urban legend: a Boston Market opening up at the KMC Exchange. It was lumped into similar urban legends like Chic-fil-A or Popeye’s chicken sandwiches coming to Europe. (Too soon?) We all saw the big “Boston Market Coming Soon” sign that sat in the food court for months on end, teasing us with thoughts of rotisserie chicken, ribs, mashed potatoes and macaroni and cheese.
Last Friday, lead writer-editor, Mary Del Rosario, spotted workers in Boston Market shirts. It was almost as if she spotted a rare and endangered animal in the wild. We thought, surely, soon, this place next to Popeye’s will finally be open for business.
Then finally, confirmation, at 8:43 a.m., Monday, Nov. 18. Boston Market will open on Friday. There will be a grand opening event complete with a ribbon-cutting, free cake and a homestyle lunch starting at 10:30 a.m.
