Start to finish: Approximately 25 minutes

1 box cake mix (your choice) ½ cup vegetable oil 2 eggs ½ cup fixings (optional, like chocolate chips, chopped nuts, coconut)

Preheat oven to 176°C (350°F) and line cookie sheet with parchment or wax paper. (I’ve used cooking spray as well, without any issue).

In a large bowl, mix together the cake mix, vegetable oil and eggs until combined. Stir in fixings as desired.

Scoop the dough onto the prepared baking sheet, at least 2 inches apart.

Bake until the cookies are set in the middle, about 10-12 minutes.

Cool for 2 minutes on the baking sheet then transfer to a cooling rack or a sheet of waxed paper.
