While stationed in Germany, you have access to some of the best beer in the world! Aside from drinking it, what else can you do with it? How about some delicious beer cheese?
This recipe is so tasty served with pretzels, broccoli or green apple slices. You could probably dip old tennis shoes in this and it would still be amazing.
3 Tablespoons butter
1 cup milk
2 Tablespoons flour
2/3 cup beer (hard cider can be substituted and is equally delicious)
1 ½ cups shredded smoked Gouda
1 1/2 cups shredded cheddar
1 teaspoon Dijon mustard
¼ teaspoon Worcestershire
Salt and pepper to taste
In a large saucepan, melt butter over medium heat.
Whisk in flour to thicken, taking care not to burn, and then gradually whisk in milk until mixture is semi-thick and smooth. Continue whisking while adding beer.
Next, gradually whisk in cheeses allowing each addition of cheese to melt before adding the next.
Once the cheese is melted, whisk in mustard and Worcestershire sauce. Add salt and pepper to taste. Enjoy with pretzels, vegetables, green apple slices or your favorite fondue dippers.
