Vanilla Custard Slice with Fruit Sauce

This light and flaky dessert combines the sweetness of vanilla custard with tart red berries.

frozen puff pastry
1 c
2 T
4 1⁄2 t
vanilla extract
egg yolks
1⁄2 c
1 1⁄2 T
all-purpose flour
3 c
heavy whipping cream
3 c
powdered sugar
12 oz
2 c
pomegranate juice
2⁄3 c
seeds from one pomegranate


Yield: 12 Servings
1. Mix sugar, flour and egg yolks in a large bowl until they are smooth.2. Bring milk to a boil and whisk in egg yolk mixture. Keep whisking until it starts to bubble and boil.3. Reduce heat and allow mixture to simmer until it becomes smooth and thick.4. Add vanilla extract.5. Pour it into a large bowl and press plastic wrap onto the custard to prevent a skin from forming. Refrigerate.6. In a large bowl, whip whipping cream, powdered sugar and vanilla until soft peaks form.7. Once the custard has cooled, gently fold whipped cream into custard.8. Cook the puff pastry as directed and cool.9. Create layers of puff pastry and custard.10. Combine cranberries, pomegranate juice and sugar in a saucepan on medium-high heat.11. Increase heat until sauce begins to boil, and then reduce to a simmer for 20 minutes, stirring often.12. Remove from stovetop, and mix in pomegranate seeds.13. Allow fruit to cool.
