Try this vibrant and colorful salad, bursting with flavors and antioxidants.

(6-ounces) fresh baby spinach
1 pk
(5-ounces) fresh arugula
1⁄2 c
dried cherries
1⁄3 c
sliced almonds (toasted)
1⁄4 c
olive oil
1 c
balsamic vinegar
1⁄2 t
1⁄4 t
1 c
goat cheese (crumbled)


Yield: 8 Servings
1. In a small bowl, combine the spinach, arugula, cherries and almonds.2. Combine the oil, vinegar, salt and pepper; drizzle over salad and toss to coat well.3.
