My family’s tradition for Thanksgiving was the week or so before my sister and I would make pumpkin bread with my grandma. She would use metal coffee cans to bake it in. I’ve adapted it by baking it in loaf pans, and I also adda cream cheese layer and a streusel topping!
1 ccanned pumpkin
2 tbaking soda
8 ozcream cheese (for cream cheese layer)
1⁄2 csugar (for cream cheese layer)
3 Tflour (for cream cheese layer)
1egg (for cream cheese layer)
1 tvanilla (for cream cheese layer)
1 cflour (for streusel topping)
1⁄2 cbrown sugar (for streusel topping)
1stick cold butter (for streusel topping)
Cook time: 60 Prep time: 15 Yield: 1 Loaf
- Mix together bread ingredients and put into two greased loaf pans.
- Mix ingredients for cream cheese layer, divide between pans and swirl into bread batter.
- Use fingers to crumble together ingredients for streusel.
- Add to top and bake for one hour at 350°F.
