Pot Stickers

These delicious dumplings are a little time-consuming to put together, but they are worth the effort. 


8 oz
Chinese cabbage
3 t
salt (divided)
1 lb
lean ground pork
1 c
green onion or scallions (finely chopped)
1 T
white wine or sherry
1 t
1 t
sesame oil
1 ds
white pepper
1 pk
wonton wrappers
2 T
Peanut or vegetable oil (for frying)


Cook time: 10 Prep time: 30 Yield: 10 people
  1. Slice cabbage into thin strips. In a large bowl, mix cabbage with 2 teaspoons of salt and set aside for 5 minutes. Squeeze out moisture.
  2. Mix together the cabbage, pork, green onions, white wine, cornstarch, sesame oil and remaining salt. Let sit for about 10 minutes to let the flavors meld.
  3. Place 1 teaspoon of mixture into the center of wonton wrapper. Pinch 5 pleats up, then pinch the top together to close. Repeat with remaining wonton wrappers.
  4. Heat wok or large skillet until very hot. Place 12 dumplings in the skillet at a time.
  5. Fry 2 minutes, or until the bottoms are golden brown.
  6. Add 1/2 cup water, cover and cook for 6-7 minutes until water is absorbed. Serve immediately.
When filling and folding pot stickers, line a baking sheet with wax paper and place filled wontons on the sheet until you're ready to start frying. Cover with a damp paper towel to keep them from drying out.Mix together soy sauce, a little sesame oil and a dash of ground ginger for a dipping sauce.
