Citrus Salad

Tangy citrus complemented with crisp pear slices, fresh greens, fragrant rosemary and balsamic vinegar help brighten a dreary winter day in this tasty salad recipe.

Ingredients

1  
bunch spinach or arugula
3  
citrus fruits (navel orange, grapefuit, blood orange, etc.)
1  
pear
1  
pomegranate
1  
shallot
1 T
fresh rosemary
   
salt and pepper (to taste)
   
olive oil (to taste)
   
balsamic vinegar (to taste)

Preparation

Prep time: 10 Yield: 4 Servings
  1. Slice three citrus fruits into rounds and remove peel.
  2. Chop pear into small pieces.
  3. Peel one small shallot and thinly slice.
  4. Remove seeds of one pomegranate by holding under water and gently pulling apart.
  5. Rinse spinach or arugula and mix in citrus, pear and pomegranate seeds.
  6. Finish off salad with olive oil, balsamic vinegar and salt and pepper to taste.
