Apple Cake with Vanilla Sauce

Try this delicious apple cake for a twist on St. Patrick's Day dessert. Topped with a delicate drizzle of vanilla sauce, this is sure to be a crowd pleaser.

baking powder
1⁄8 t
1⁄4 t
ground cloves
1⁄4 t
ground nutmeg
6 oz
unsalted butter
3⁄4 c
sugar (plus 2 tablespoons)
3⁄4 c
large apples (Granny Smith or Golden Delicious recommended)
egg yolks
3⁄4 c
1 1⁄2 c
whole milk
1 1⁄2 t
vanilla extract


Yield: 8 Servings
  1. Preheat oven to 375˚F. Grease and flour an 8" or 9" round, square or bundt pan.
  2. Sift flour, baking powder, nutmeg and cloves into a large bowl.
  3. Combine butter and flour mixture to form crumbs. Add sugar.
  4. Peel apples, chop to desired size and add to flour mixture.
  5. Separately whisk two eggs and incorporate into apple-flour mixture.
  6. Pour dough into pan and smooth the top. Sprinkle remaining sugar on cake.
  7. Bake 45-50 minutes or until top is lightly browned and middle is cooked.
  8. Whisk egg yolks and sugar for at least two minutes.
  9. Bring milk to a boil and temper eggs. Slowly add milk to egg yolk mixture. Return to pan.
  10. Stir on medium heat until sauce is a slightly thickened liquid (about 4 minutes).
  11. Pour sauce over cake slices. Serve cake and sauce warm or cold as desired.
