With Valentine’s Day approaching, it can be easy to fall into the temptation of eating sugary sweets and calorie loaded pre-fix menus. Check out this entrée and dessert recipe provided by Eating Well for a healthy Valentine’s Day dinner that will keep your giddy heart happy and healthy.
Filet Mignon with Sweet Potato Mash and Broccolini
Start to finish: 80 minutes
· 1 tablespoon slightly softened butter
· 1 small minced garlic
· 1 teaspoon chopped fresh thyme, rosemary, and chives
· 8 oz. sweet potatoes cut into small chunks
· ¼ cup low-fat milk
· 1 of bunch broccolini (or use normal broccoli)
· 4 teaspoons of olive oil
· 2 4 oz. filet mignon steaks
1. Preheat oven to 218 Celsius
2. Combine the butter, garlic and herbs in a bowl and set aside.
3. Boil a pot of water and add sweet potatoes. Let cook for about 15 minutes. Drain out the water and add milk, 1 teaspoon of herb butter, salt and pepper and then mash with a masher (fork will do, too) until you’ve reached a desired consistency. Cover and keep warm.
4. Toss broccolini (or broccoli) with 2 teaspoons of oil, salt and pepper into a large bowl. Place them on a baking sheet and roast until softened, about 10 minutes per side.
5. Pat steaks dry with paper towel and season both sides with salt and pepper. Heat the olive oil in a medium sized skillet on medium-high heat. Once hot, sear the steaks, turning once, until browned on both sides (about 2 minutes per side). Once the broccolini is finished, remove from the oven and place the seared steaks on a baking sheet for 3-5 minutes for medium-rare.
6. Transfer each steak on a plate and top them with 1 teaspoon of the herb butter. Serve with broccolini and the mashed sweet potato.

· 16 dates, pitted and chop (can take out dates if desired)
· 3 ripe avocados
· 1 cup almond milk
· 1 cup unsweetened cocoa powder
· ¼ cup maple syrup
· 1 tablespoon coconut oil
· 1 teaspoon vanilla extract
· Pinch of sea salt
· Handful of raspberries for garnish
1. Soak dates in 1 cup of hot water until soft (about 5-10 minutes) and drain.
2. Process the dates, avocados, almond milk, maple syrup, oil, vanilla, and salt in a food processor until smooth and creamy. Refrigerate until cold (about 3 hours)
3. Serve with a little sea salt and raspberries as a garnish
